In order to turn off Trophy videos on PS5, all you need to do is go to Settings > Captures and Broadcasts > Trophies and disable both Save Trophy Screenshots and Save Trophy Videos. If you've already got a bunch of these videos eating up PS5 storage space, then you can delete them from the Trophy tab of the Media Gallery app.

Obviously, if you ever want to re-enable this feature at any time in the future, then just return to Settings > Captures and Broadcasts > Trophies and re-enable the Save Trophy Screenshots and Save Trophy Videos toggles.
